Ibérico
A native Iberian breed of pig, free-ranged on Spain’s dehesa pastureland, where it feeds on grass and on the forest’s fruits (acorns and chestnuts). That diet and the exercise produce heavily marbled, deeply flavoured meat, the basis of Iberian ham, cured sausages and tapas such as secreto and presa.
Oloroso
A sherry from Jerez aged in contact with air. It is dark amber, dry and nutty. On a tapa it usually means the meat or sauce was cooked or reduced with this wine.
