The tapas dictionary
- Erizo
- The sea urchin is a round, spiny marine animal that clings to rocks on the seabed. Spanish cooking uses its orange gonads, known as roe or coral, which taste intensely of the sea and have a soft, creamy texture. They are eaten raw, in omelettes, scrambled with eggs, or spread on toast.
