Ham Croquettes
Croquettes are a culinary preparation consisting of a creamy filling, often with chopped ham, coated in batter and then breaded and fried. They are typically served as a tapa or starter, accompanying a drink. Their origin can be traced back to France, but they have become extremely popular in Spain.
Ibérico
A native Iberian breed of pig, free-ranged on Spain’s dehesa pastureland, where it feeds on grass and on the forest’s fruits (acorns and chestnuts). That diet and the exercise produce heavily marbled, deeply flavoured meat, the basis of Iberian ham, cured sausages and tapas such as secreto and presa.
