- A canelón is a piece of cylindrical pasta, usually filled with minced meat, fish, or vegetables. It is typically covered with béchamel sauce and cheese, and then baked. It is a main course often served at family celebrations. Its origin can be traced to Catalonia, adapting an Italian recipe.
- Rabo de Toro
- Cascoporro is not an ingredient. It is a colloquial Spanish word that nearly always appears in the phrase «a cascoporro», used above all in Castilla-La Mancha and other rural areas. It means in large amounts, in abundance, loads of it. Applied to a tapa, it means an ingredient is served generously.
