Bravas

Short for "patatas bravas", one of Spain’s most popular tapas. Chunks of potato are fried until golden outside and soft inside, then served with salsa brava, a spicy red sauce made from tomato, paprika and chilli. Many bars serve them with a dollop of garlic alioli as well.

Hilo de Chile

Very fine threads of dried chilli, almost like strands of hair. They are added at the end of the dish to decorate and give a mild touch of heat.
