Bravas
Short for "patatas bravas", one of Spain’s most popular tapas. Chunks of potato are fried until golden outside and soft inside, then served with salsa brava, a spicy red sauce made from tomato, paprika and chilli. Many bars serve them with a dollop of garlic alioli as well.
Aioli
Aioli is an emulsified sauce traditionally made from garlic and olive oil. Egg or bread is often added to give it body. It is served as a condiment or spread on bread, and is common in Mediterranean cuisine, particularly in Catalonia and the Valencian Community.
