- Bravas
- Short for "patatas bravas", one of Spain’s most popular tapas. Chunks of potato are fried until golden outside and soft inside, then served with salsa brava, a spicy red sauce made from tomato, paprika and chilli. Many bars serve them with a dollop of garlic alioli as well.
- Aioli
- Aioli is an emulsified sauce traditionally made from garlic and olive oil. Egg or bread is often added to give it body. It is served as a condiment or spread on bread, and is common in Mediterranean cuisine, particularly in Catalonia and the Valencian Community.
