Rabas
Rabas are battered and deep-fried squid rings. They are typically served as a tapa, often with lemon or aioli. The dish is strongly associated with the Cantabria region in northern Spain, where it is a very popular appetizer.
Tinta de Calamar
Squid ink, the dark liquid a squid releases to escape predators. Cooks use it as both a colouring and a seasoning: it turns rice, pasta and bread jet black and adds a savoury, mildly briny taste of the sea. It is the base of arroz negro and of black-shelled tapas across Spain.
